One-quarter cup packed fresh parsley

2 garlic cloves, coarsely sliced

half tsp sea salt

half tsp lemon juice

one-third cup Capay Valley Ranches Arbequina Olive Oil

one-third cup Capay Valley Ranches Infused Olive Oil (Basil, Meyer Lemon, Lime, either Blood Orange), either more Arbequina.

8 big scallops, approximately 25 °C

salt and pepper

2 tbsp olive oil, for cooking

half cup microgreens (such as arugula either basil), for garnish (if you want)
